Sunday again… Something we should all do more of is forget about getting “skinny.” Eat well and exercise and the weight will take care of itself! A well balanced diet is super important because it provides you with the energy you need to keep active throughout the day and also provides you with the nutrients you need for growth and repair. A healthy diet helps you to stay strong and healthy to prevent diet-related illness, helps with heart health, strong bones and teeth as well as weight control!

Eating a healthy diet that consists of lots of fruits, vegetables and whole grains while moderating unsaturated fats, meat and dairy can help to maintain a steady weight. Eating more of these foods leaves less room for foods high in fat and sugar, which can be the leading cause of weight gain.



Lunch: Rotisserie Chicken Cobb Salad

Ingredients-
2 tbsp extra virgin olive oil
2 tbsp red wine vinegar
2 plum tomatoes, diced
1 rotisserie chicken
1 avocado, diced
4 slices cooked turkey bacon, broken into pieces
¼ cup of crumbled blue cheese
4 thick slices of iceberg lettuce
hard-boiled egg, grated

Directions-
In a large bowl combine olive oil and red wine vinegar with ½ tsp of salt and ½ tsp pepper. Stir in plum tomatoes. Shred 3 cups of meat from rotisserie chicken. Stir into dressing along with avocado, bacon and blue cheese. Serve over lettuce and top with grated hard-boiled egg.


Lunch: Kale and Roasted Cauliflower Salad

Ingredients-
1 lb. cauliflower florets
2 tbsp extra virgin olive oil
¼ cup lemon juice
3 tbsp extra virgin olive oil
1 bunch of kale, chopped
¼ small red onion, thinly sliced
1/3 cup crumbled feta cheese
1/3 cup golden raisins
1/3 cup pine nuts

Directions-
On a large baking sheet, toss cauliflower with olive oil, salt and pepper.roast in 450 degree F oven for 25 minutes. In large bowl, whisk lemon juice, olive oil and salt. Toss kale with dressing and let stand 5 minutes. To kale, add cauliflower, onion feta cheese, raisins, toasted pine nuts. Toss until combined.
